The alluring purple hues of these special leaves will fascinate and amaze the palate at each brew. This colorful variety is called Ziya - literally “purple bud” - and it acquires its peculiar shade, hidden at the bottom of the leaf, from the great concentration of anthocyanins.

The Ziya cultivar is inherently different from Zijuan, the latter being a domesticated variety. These Ziya ancient tea trees grow wild in the province of Yunnan, enclosing their quiet seclusion in the multitude of colors of this white tea.

The transparency of the liquor releases a great variety of aromas, filling the mouth with an initial sweetness, that gives way to a balsamic afterstaste. Fruity notes of pears and grapes are immediately followed by hints of cork and sweet potatoes, while a warm cedarwood aroma lingers in the palate.

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Brewing time: Begin with a 30-40 seconds brew. Increase with each successive brew as needed. 
Water temperature: 85° C
Number of brews: 10

WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3-4 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 6-7 hours. Filter the liquor and drink within 24 hours
