Delicate buds shine of a silver hue when touched by warm water, and they open like a rare flower with the first infusion, releasing the gentle purity of Dabai cultivar
For our 2021 Baihaoyinzhen we have decided to choose this special selection from Fuding, completely sun-dried: it highlights the purity of its taste, avoiding any hint of fire and artificial heating.

These delicate silver-colored needles - yin zhen 银针 - are covered by soft white fur - bai hao 白毫 -, which is rich in amino acids, making the 2021 tea particularly fresh. 
It has the fragrances of a white tea, the clarity of a green tea, and the persistence of a young, tender shengpu.

The silver shades of the buds leave the way to the warmer tones of gold that characterize the liquor. As we continue with the infusions, an ever more intense floral note opens in the cup, offering lingering hues of wet roses, thyme, and linden honey.

The quality of the harvest is fit for an emperor, as only emperors could have the privilege of drinking the purest liquor of the youngest gems, still unripe and covered by dew.

Origin: Fuding, Fujian province
Flush: Spring 2021
Storage: the leaves can be stored in their original package or in ceramic vases. Avoid heat, light, and moisture.


Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 25 ml of water
Brewing time: Begin with a 30-40 seconds brew. Increase with each successive brew as needed. 
Water temperature: 80° C
Number of brews: 4-5

WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3-4 minutes
Water temperature: 80° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 6 hours. Filter the liquor and drink within 24 hours.
