Baijiguan 白鸡冠 - Zhengyan Yancha
One of the four most famous yancha (四大名枞 sìdàmíngcōng) together with Dahongpao, Tieluohan, and Shuijingui; Báijīguān 白鸡冠 - literally white cockscomb - made its appearance in Ming dynasty (1368-1644).
The present tea comes from Zhengyan area, the core of Wuyishan park in Fujian province, and brings its identifying minerality, with a floral hint, sign of its low-roasting. It differs from other rock teas chiefly in the light color of its leaves, given by the fact that it is - like Anjibaicha green tea - an albino cultivar, whose medium-sized leaves are immediately recognizable by their very light green color, and by the pointy shape, reminiscent of a cockscomb.
Its fantastical leaves have been grown with much care and assiduity, and release a glowing golden color when brewed, gently opening as the infusion continues.

Format: 50 gr. signature package
Storage: the leaves can be stored in their original package or in ceramic vases. Avoid heat, light, and moisture.
Tea/Water Ratio: 1 gr. of tea every 25 ml of water
Rinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 10-second brew. Increase with each successive brew as needed.

Number of brews: 5-6

Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.

Within the European Union the shipping time is between 1-5 days, while for Extra-UE shipment the delivery time varies between 5 and 12 days. Orders are shipped on Wednesday and Friday: for special requests, please add a note to your order, we will endeavor to fulfill them.
In Europe and US we ship through TNT Express courier or UPS; For shipments in Italy, you can select a TNT point where to collect your package, while for shipments in the US you can choose a UPS point. In Asia we use EMS.
