Before infusing this special red tea from Wuyishan, its uniqueness can already be grasped by reading the three Chinese characters that compose its name: Jin 金, gold, like the delicate buds that brighten the dark oxidized leaves and release a sweet honey aroma; Jun 骏, imperial horse, rare and fine like the quality of this tea; and finally Mei 眉, eyebrow, reminiscent of the peculiar twisted shape of the leaves, delicately rolled by hand with the utmost care.

However, only after infusing these special leaves, one can truly savor the sweet aroma of their amber liquor, with mellow notes of caramel and sunchoke, and fresh hints of aromatic herbs.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Rinse:
 before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with warm water and pour it after a few seconds.
Brewing time: Begin with a 15-second brew. Increase with each successive brew as needed. 
Water temperature: 85° C
Number of brews: 12


WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.
