This "Yunnan Gold" red tea is a more delicate alternative to our Ancient Trees Dianhong. Lincang is situated in the western border of Yunnan, separated from Xishuangbanna - where our Ancient Trees grow, on the peak of Lunan mountain - by Pu'er area, originally called Simao. 

Lincang and Lunan are inherently different, starting from the terroir. In addition, Lincang tea trees are very ancient, reaching 500 years of age. These centuries-old trees give this red tea a great complexity and a lighter body, with a strong initial sweetness. The subtle under-forest aroma we can find in the aftertaste is a constant in Yunnan red teas, here enriched by a tropical fruit note that lingers in the palate, and refreshes the mouth.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Rinse:
 before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with warm water and pour it after a few seconds.
Brewing time: Begin with a 15-second brew. Increase with each successive brew as needed. 
Water temperature: 85° C

WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.
