qiu, the Chinese character for Autumn, is composed of the radical 禾 he - grain - that indicates the traditional period for harvest, and 火 huo - fire - as the color of the tree leaves that during this season light up with warm tones of gold and amber. Our Ancient Tea Trees, situated on the peak of Lunan mountain, don't turn red in autumn, but their flavor inherently changes, becoming more mellow and sweet. 

The autumn harvest starts in September, after our Spring tea has reached your cups, and surprised your palate. The delicate tea leaves are harvested by hand, and after sun-drying, they get pretty hues of dark green, that will become redder and redder as time passes by. The first brews have the full fragrance of wood and wildflowers that characterizes our land, but after the third and fourth brews, a creamy aroma slowly opens, revealing multiple nuances of flavor, new and unknown. A pleasant, long-lasting bitterness silently comes from the back of the palate, opening in the mouth like perennial Camellia flowers. 

This peculiar harvest immediately brings us back to the beautiful landscape of our land in Xishuangbanna, and through these small stone-pressed cakes we want to share a glimpse of its wonderful scenery with you. Enjoy the differences of each brew, and storage these leaves with care, waiting for new seasons and new years, to finally taste the flavor of time passing.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Rinse:
 before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 10-15 second brew. Increase with each successive brew as needed. 
Water temperature: 100° C
Number of brews: 12


WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 2-3 minutes
Water temperature: 100° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 6-7 hours. Filter the liquor and drink within 24 hours.
