The round cake immediately recalls to the mind the real meaning of Yueguangbai: the "Moonlight white tea" is made using an extremely delicate drying process which only happens in the shadow. Just like moonlight phases, the pure leaves, always shaded from direct sunlight, take on different hues that range from the brightness of the white buds to the dark shadows of the apical leaves. 

The 2020 harvest is particularly mineral and complex, and the round floral bouquet that comes from the soft leaves has a delicate purity that lingers in the aftertaste. The golden liquor shines with the first morning sunlight, while the long white buds - typical of dayezhong or "big leaf" cultivar - dance gracefully in the teapot.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Rinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with warm water and pour it after a few seconds.
Brewing time: Begin with a 40-second brew. Increase with each successive brew as needed. 
Water temperature: 85° C
Number of brews: 10

WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 4 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.
