Zhengshan Xiaozhong might sound similar to its western namesake, Lapsang Souchong, but its flavor is totally different: delicate and refined, this red tea from Tongmuguan, Fujian province, is the epitome of elegance.

It was the first red tea in the world, created around the year 1560. It is traditionally smoked using pinewood, leaving an intense smoky aroma that is also released in the liquor, and in the air, with each infusion. This version maintains instead a natural sweetness, and the infusion reveals a very light smoky aftertaste which is never too strong or intrusive. Its luscious hints of ripe fruit mingle with a delicate woody aftertaste and mellow notes of honey and baked pumpkin, that give off new and ever-changing scents.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 30 ml of water
Rinse:
 before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with warm water and pour it after a few seconds.
Brewing time: Begin with a 15-second brew. Increase with each successive brew as needed. 
Water temperature: 85° C
Number of brews: 12


WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.
