At an altitude of about 1850 meters, Paliang Mountain is an almost inaccessible earthly paradise, located in a key protected area in Xishuangbanna, Yunnan province. Small villages, isolated from the outside world, are home to Lahu minorities, who live among the hillside virgin forests. 

As neighbor of Bulang mountain, Paliang is constantly surrounded by clouds and mist, making it perfect for the growth of high-quality tea. The most unique characteristic of this tea lays in the peculiar tea trees it comes from: few leaves are concentrate only on top of the tree, consisting in a tall trunk with almost no branches. This tea is therefore called 高杆茶 Gāogānchá, meaning "tall pole tea".

This uncommon appearance allows the few remaining leaves to absorb all the nutrients from the tall old trees, giving life to a perfectly balanced and rich flavor. At a first sip, this tea is thick and characterized by the most gentle bitterness, but in the aftertaste it reveals a silky and soft sweetness, that slowly leaves place to a fragrant aroma of wild flowers, while the palate soon craves for more infusions.

Storage: the leaves can be stored in their original package or in ceramic vases. Avoid heat, light, and moisture.

Infusion Parameters


EASTERN BREWING
Quantity: 1 gr. of tea every 30 ml of water
Rinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 10-15 second brew. Increase with each successive brew as needed.
Water temperature: 100° C
Number of brews: 10-12


WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 2-3 minutes
Water temperature: 100° C


COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 6-7 hours. Filter the liquor and drink within 24 hours.
