This pure white tea is made up of the silver buds and the first two apical leaves of Dabai cultivar, which open in the teapot during the infusion, blooming like a candid peony - 牡丹 mudan in Chinese. 

Baimudan was originally born from the necessity to use the apical leaves, after picking the first newborn buds for the imperial Baihaoyinzhen. Its flavor is indeed richer than the Silver Needle variety, and the infusion is darker in color, with warm golden tones. The dry leaves have an intense nutty scent, reminiscent of an autumn forest: this warm hue can also be found in the taste of the liquor, together with sweet notes of ripe peaches, chamomile and honey, and the typical freshness of the buds, mellow and long-lasting.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 gr. of tea every 25 ml of water
Brewing time: Begin with a 30-4seconds brew. Increase with each successive brew as needed. 
Water temperature: 85° C
Number of brews: 4-5

WESTERN BREWING
Quantity: 1 gr. of tea every 100 ml of water
Brewing time: 3-4 minutes
Water temperature: 85° C

COLD BREW
Quantity: 1 gr. of tea every 100 ml of water
Brewing: put the tea leaves in room temperature water and steep for 6 hours. Filter the liquor and drink within 24 hours.
