The uniqueness of Tiānjiān 天尖 is given by its special processing: the drying process is made using a traditional technique which exploits the warm air derived from the fire of a seven-stove oven, called qīxīng zào 七星灶.

The tea leaves absorb a fragrant pinewood aroma, and get a warm and full-bodied texture. After the drying process, the leaves are then pressed in hand-woven bamboo baskets, which preserve the precious leaves for the years to come, cradling them in their mellow bamboo fragrance. At each new brew, the leaves release all the aromas they encountered in their multiple years of aging and fermentation, warming the body and leaving in the palate a lingering underwood scent.

Infusion Parameters

1 gr. of tea every 30 ml of water
 before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 15-second brew. Increase with each successive brew as needed. 
Water temperature: 100° C
Number of brews: 8-10

I was very intrigued by dark tea. I had never tried it. It as a robust flavor combined with lightness. I enjoyed it very much and hope to taste it again.

a spectacular dark tea

This dark tea from Hunan is a rare gem between all the dark teas. It has notes and flavours and aroma that makes it special and different from other dark teas. Mellow, rich, interesting tea with notes of dried cherries, aged whiskey, raisins. I would continue drinking it for hours and hours.
