2021 Tieguanyin 浓香铁观音 - High Roasting
This new version of the more traditional Low-roasted Tieguanyin has a more intense twist, with warm fruity notes of peaches and pomegranate. Its tightly rolled leaves are darker in color and disclose a long-lasting roasted aroma, that fills the air with an intense floral fragrance.
Tieguanyin - the Iron Goddess of Mercy - derives from the homonymous cultivar grown in Anxi, Fujian province. However, this special 2021 spring harvest comes from Fo Shou cultivar, which adds a peculiar minerality to the natural floral fragrance that still persists in this tea. An amazing complexity is also given by the higher oxidation level that discloses a great range of aromas, releasing three different flavors in the teacup: a whirl of flowers, a juicy note of ripe fruit, and a lingering roasted aftertaste with mellow notes of dark chocolate.

Storage: the leaves can be stored in their original package or in ceramic vases. Avoid heat, light, and moisture.

Tea/Water Ratio: 1 gr. of tea every 25 ml of water
Rinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 15-second brew. Increase with each successive brew as needed.

Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.

In Europe and US we ship through TNT Express courier or UPS; For shipments in Italy, you can select a TNT point where to collect your package, while for shipments in the US you can choose a UPS point. In Asia we use EMS.

I first tasted this TGY high roasted during an event Rhyme of Tie Guan Yin and it was a huge « coup de coeur » like we say French People. The fact that it is roasted exhales even more the string flowery aromas and I think it’s the perfect tea for the autumn. Since I bought this tea, I brewed it like 5/6 times eith Gong fu cha method and we can easily brew it like 10 times ! We can have fabulous moments with that tea , I highly recommend it
